Any time is a great time for a glass of beet kvass! It is a wonderful way to add probiotics to your diet, it’s refreshing and tastes great, and it’s easy to ferment a second time. Blood oranges are a great addition to a second ferment of beet kvass because the flavors pair nicely. The blood oranges sweeten the kvass slightly and they brighten the flavor. Blood oranges are high in vitamin C and potassium, they add antioxidants and flavonoids, they support the immune system, and contain anti-inflammatory properties.
Why You Will Love This Recipe
Easy: simply pour your beet kvass in a jar, add blood orange juice and peel and seal. It is just that simple!
Healthy: I know I say this a lot, but it’s true! You are increasing the nutrition of your food simply by fermenting it. To be specific, this recipe is for your heart. It is rich in nitrates that convert to nitric oxide, which relax blood vessels, lowering blood pressure and improving cardiovascular health. Both beets and blood oranges help to regulate blood sugar levels.

Ingredients
You will need one batch of beet kvass, made with red beets. Check out my post on making beet kvass if you don’t already have some on hand.
You will also need one blood orange. If you can’t find blood oranges at your local grocery you can substitute with a regular orange and add a splash of pomegranate juice (optional).
Tools
I recommend using flip-top bottles for second ferments, but a mason jar will work perfectly.
You will also need a juicer, if using fresh whole oranges. I recommend this one.
How To Make Second Ferment Blood Orange Kvass
Step 1: using a funnel, pour 28 oz., or 3 1/2 cups of beet kvass into a flip top bottle.

Step 2: using a knife, peel 2 – 3 slivers off the peel of the blood orange and add to the flip-top bottle.
Step 3: cut the blood orange, or orange, in half and juice it. Then add the juice to the flip-top bottle.

Step 4: Stir the juice in the kvass. Seal the flip-top and place the bottle on the counter out of direct sunlight, or in a cabinet (but don’t forget about it!).

How To Know The Second Fermentation Is Ready
Wait a day and then “burp” the bottle. To burp the bottle you will simply flip the top. Do this carefully as a lot of pressure may have accumulated and you will have a mess on your hands if you’re not careful.
If the bottle lets out a small passing of gas, re-seal the flip-top and let it sit longer. When the bottle passes a fair amount of gas when opened, and is good and fizzy, your second ferment blood orange kvass is ready! Pour it in a glass (over ice if you like) and enjoy!
Re-seal the flip-top and place the bottle in the refrigerator. This will slow the fermentation considerably for maximum freshness and fizziness.

Second Ferment Blood Orange Beet Kvass
Equipment
- 1 Flip-top bottle
- 1 Juicer
Materials
- 1 Batch Beet kvass (made with red beets)
- 1 Blood orange (can substitute with regular orange and a splash of pomegranate juice)
Instructions
- Using a funnel, pour 28 oz., or 3 1/2 cups, of beet kvass in a flip-top bottle.
- Using a knife, slice 2-3 slivers of peel off the blood orange rind and place in the flip-top jar.
- Cut the orange in half and juice. Pour the juice in the flip-top bottle.
- Stir and seal the top and place bottle in a counter, out of direct sunlight, or in a cabinet.
- Check your ferment by burping the bottle 1-2 times a day. Once enough gas has built up for your liking the blood orange kvass is ready.
- Pour a glass and enjoy!
- Re-seal the bottle and place in the fridge. The kvass will last up to a week.
